Here’s a simple healthy dal recipe with cucumber.
Cucumber Dal Recipe
Ingredients
1 cup cucumber (sliced)
1 cup mung beans (cooked and mashed)
1/2 tsp garlic (chopped)
1/2 cup grated coconut
1 tsp cumin seeds
asafoetida, pinch
1 tsp mustard seeds
curry leaves, a few
2 green chilis
1 tsp coconut oil
Directions
Heat a saucepan and add a spoonful of coconut oil. Drop in the mustard seeds and curry leaves and heat until they pop. Now add the sliced cucumber and sauté well. Add 1/2 cup of water and cover. Cook until the cucumber can be pierced with a fork.
In a blender, add the grated coconut, cumin seeds, garlic, and green chili and blend until smooth. Now add this paste to the cooked cucumber mixture. Add the cooked dal and mix well. In the end add a pinch of asafoetida. Add salt to taste. Serve hot with rice, Indian flatbread, or chappati.
This is a super simple pitta diet but is very tasty and nutritious. Even my 2-year-old enjoys this recipe!
